Perfect Crispy Salmon
A reliable sear-then-roast method: 3 minutes skin-down in butter on high heat, then 8-10 minutes in a 400 degree oven. Crispy skin, succulent flesh every time.

Ingredients
- 2 6-8 oz fillets skin-on salmon fillet
- 2 tbsp unsalted butter
- flour, optional, for extra-crispy skin

Heat oven to 400 degrees.

In a cast-iron skillet, melt about 2 tablespoons unsalted butter over medium-high heat.

Optional: lightly dust the skin side of each fillet with flour for extra-crispy skin.

Add salmon skin-side down. Cook over high heat for 3 minutes to brown the skin, spooning melted butter over the top of the fish as it cooks.

Transfer the pan to the oven. Roast until fish is just cooked through, 8 to 10 minutes.
